This workshop explores the context of Urcuquí, where lignocellulosic agricultural waste is often burned or underutilized, posing both challenges and opportunities. It presents an approach to valorize local residues, especially bean husks, to cultivate pink oyster mushrooms (Pleurotus djamor) through an accessible community-based process. Participants will also explore other applications and tour Yanapay’s facilities and community laboratory focused on innovation and social impact.

The speaker will discuss the local context in Urcuquí regarding agricultural waste generation and its potential for reuse. They will present the fundamentals of producing pink oyster mushrooms (Pleurotus djamor) from this waste, as well as the general process of conditioning the substrate through alkalization.

In addition, they will share their experience with bioeconomy and humanitarian technology initiatives, exploring opportunities for waste recovery and the development of sustainable solutions at the community level.
